Pinot Noir

Pinot noir is one of the most refined and the most perfect vine varieties in the world. The soil in Valais is perfect for its cultivation. It can be either light and refined or warm and full-bodied. It was first mentioned in Valais in the middle of the 19th Century when it went by the name of Petite Dôle. It is now the red vine variety which is the most widely planted in Valais.

Colour : Dark ruby, bright.

Fragrance : Cherry, morello cherry, raspberry and blackcurrant.

Taste : Very refined, elegant, generous, delicate and pure.

Alcohol : 13 % vol.

Ideal serving temperature : 16-18°C

Preservation : 5 to 10 years.

Fermentation : Traditional.

Name : AOC Valais.

Culinary accompaniments : Cushion of veal, guinea-fowl, fondue bourguignon, beef fillet, rib of beef, calves sweetbread and cheese.
